Byron's Bistro - Savory Cottage Pie
Just in time for the cooler weather, here's a yummy Cottage Pie recipe from Team SF's culinary expert, Chef Byron....guaranteed to satisfy! Bon appetite!
Ingredients
1 ½ tbsp EVO
1 lb extra lean ground beef
1 small onion
1 clove crushed garlic
1 tbsp crushed rosemary
1 tbs thyme
2 tbsp tomato paste
2 tbsp flour
½ cup of red wine OR 1 tbsp of red wine vinegar
1 ½ cups beef broth
3 cups mashed potatoes
2 egg yolks
1 cup grated Parmesan
2 cups frozen mixed vegetables
Directions
1-on high heat brown ground beef, add onion, garlic, spices
2-when no longer pink add tomato paste and stir for 2 minutes. Stir in flour to thicken.
3-add wine and beef broth, stir occasionally until all liquid has been absorbed/evaporated (takes 15-20 minutes)
4-put beef in baking dish and pat down
5-add thawed vegetables, mix and level
6-add egg yolks and 1 cup Parmesan to mash potatoes and combine, then add this topping to your casserole
7-sprinkle top with more grated Parmesan
8-bake for 60 minutes in 350 oven
